  • kefir - 550 ml
  • flour - 2 cups (320 g)
  • boiling water - 220 ml
  • egg - 3 pieces (large) or 4 small
  • sugar - 3 tbsp. spoons
  • vegetable oil - 4 tbsp. spoons + 1 tbsp. spoon for greasing the pan
  • butter - 60 g (for greasing finished products)
  • soda - 1 teaspoon (partial)
  • salt - 0.5 teaspoon

Preparation:

1. Break the eggs into a mixing bowl. If they are small, then take 4 of them. Add salt and sugar and beat with a whisk or mixer until smooth.


2. For the recipe we need kefir at room temperature, or even slightly warm. You can warm it in a water bath. Add it to the egg mixture and stir.


3. Sift the flour either into a separate bowl or directly into the dough being prepared. Whichever is convenient for you. Place it into the liquid mixture so that there are no lumps left in it. You can also use a whisk or mixer at low speed.


4. Boil water in advance. Pour it into a glass and add soda to boiling water.


Stir until completely dissolved and pour into the dough in a thin stream. At the same time, continue to stir the entire mass. The dough should be homogeneous and without lumps.


5. Leave it to steep for 15 – 20 minutes. During this time, all components will connect, and the mass will become elastic and elastic. After the allotted time, add oil and stir. There should be no oil circles left on the surface of the finished dough.


6. Now you can start baking. It is better to do this in a well-heated frying pan. For the first test copy, it is advisable to lubricate it with oil. Then scoop the dough into a ladle and pour it onto the heated surface. Rotate the pan in a circle so that the dough spreads over the surface in a thin layer.

The thinner the layer, the more tender the finished product will be. And the more holes will appear on its surface.

Small bubbles will appear at first. Then they will burst and there will be many small holes. It’s so interesting to watch this!... Although you don’t always have time. The best and fastest way to fry pancakes is to use two frying pans. Then there is no downtime, and you complete the task twice as fast. Save time!


7. And so, holes appeared, and the edges of the product had already dried up and rose up. This will become especially noticeable if you first run a thin knife along the border zone between the item being fried and the frying pan. You can also notice that the surface is covered with a matte film and there is no batter left there.


This is a signal that it is time to turn it over to the other side. By the way, it will bake much faster. As soon as uneven ruddy dots of different sizes appear below, the pancake can be removed and subsequently folded into a pile.

Preparation:

1. Sift flour into a bowl. This must be done in order to saturate it with oxygen. Add sugar, vanillin on the tip of a knife and soda and mix.

2. In a separate large bowl, beat two eggs and salt with a mixer.

A very tasty step-by-step recipe for 1 liter of kefir

The technology for preparing this recipe is different from the previous ones. Therefore, this method also deserves attention to be considered.


Using this recipe you can bake very tender and tasty quite fluffy pancakes. But if you dilute the dough with water in an additional proportion, they will turn out much thinner.

We will need:

  • kefir – 1 liter
  • boiling water – 2 cups
  • flour – 550 – 600 gr
  • egg – 4 pcs
  • sugar – 3 – 4 tbsp. spoons
  • salt – 1 tbsp. spoon (without slide)
  • soda – 1 teaspoon (without a slide)
  • vegetable oil – 5 tbsp. spoons

Preparation:

1. Pour kefir into the pan, all at once. We will knead the dough in a saucepan, since it will be subjected to heat treatment. Determine the fat content of kefir yourself. It will be tasty from any, but the nutritional value can be different.


2. Add eggs, salt and sugar.


Mix the mixture until smooth using a whisk. Or you can use a mixer.

3. Place the finished mixture on low heat. With constant stirring, bring it to a hot state. The temperature is needed approximately 50 degrees. Make sure it doesn't stick to the bottom.


4. Sift the flour in advance and pour it into the kefir mixture, first 550 g, while actively stirring it with a whisk or mixer. If you want your finished products to not be very thin, then add the remaining flour. If you want to bake them thin, then you no longer need to add flour.


Stir until the mixture becomes homogeneous. However, we can notice that it turned out to be quite thick. But we still have water. This is what we will add at the next stage.


5. But first you need to boil it. Then pour the required volume into a suitable container and pour soda into it. Stir until it is completely dissolved.


And while the water has not yet cooled down, pour boiling water in a thin stream into the flour mixture. Do not forget that during this process the mass must be actively mixed until it is homogeneous and even without lumps.


6. Let the dough rest for 15 minutes. Then pour in the oil. We use only plant-based ingredients. However, it can be taken in a 50x50 ratio along with cream. This way the finished products will turn out even tastier and more aromatic.


Please note that the finished dough should have a lot of bubbles.

7. Although we add relatively a lot of oil, it is better to additionally grease the frying pan for baking the first product. Bake it on one side. And when it browns, turn it over and brown on the other side. When turning, make sure there is no batter left on the surface.


To bake the next product, you no longer need to grease the surface with oil.


When the first pancake is ready, look at its thickness. If you want it to be thinner, add a little more boiled water. If you want it to be thicker, add a little flour and mix again.

Many people do not eat eggs during Lent. And therefore, such a recipe must be in the piggy bank of those who keep it.

We will need:

  • kefir – 500 ml
  • boiling water – 250 ml
  • flour – 2 cups
  • sugar – 2 tbsp. spoons
  • salt – 0.5 teaspoon
  • soda – 0.5 teaspoon
  • vegetable oil – 2 tbsp. spoons

Preparation:

1. Pour kefir into a bowl. Add salt and sugar to it and mix.

2. Sift the flour and add to the kefir mixture.


The dough should be quite thick, similar in consistency to sour cream. When it has been mixed so that there are no lumps left in it, we move on to the next stage.


3. Now it's time to add boiling water. Usually in such cases, soda is mixed in it. But we'll change our tactics a little. Prepare a spoon with baking soda. Holding it over the dough, carefully pour boiling water directly into the spoon, and continue to pour out exactly half. Immediately stir the mixture quickly until it becomes homogeneous.


Then, with continuous stirring, pour all the remaining boiling water into the mixture. The finished dough is quite liquid. But we will give him the opportunity to brew a little. This will take 15 minutes.

  3. Boil water, pour a glass, and pour soda into it.

  5. Leave for 20 minutes until the mass becomes elastic. Next, pour the oil into the mixture and mix well again.
  6. Fry the pancakes in a well-heated frying pan, lightly greasing its surface with lean (or butter) oil at first.
  7. Use a ladle to scoop out the dough and, turning the pan in a circle, distribute it over the frying surface.
  8. The thinner the layer of dough is poured, the tastier and airier the pancake will be, and the more small, neat holes will form on its surface.
  9. As soon as we notice that the edges are fried, peeled off and raised, and the holes in the pancake have browned, we can turn it over to the other side.
  10. As soon as ruddy spots of different diameters appear on the back side, the pancake is removed, folded into a stack, and greased with butter.

Serve with thick confiture, condensed milk or classically with sour cream.

For cooking you need:

  • a glass of low-fat milk;
  • kefir 2.5% – 400 ml;
  • premium flour – 300 g;
  • granulated sugar - 2 tbsp. l.;
  • a couple of pinches of salt;
  • egg yolks – 3 pcs.;
  • vegetable oil – 4 tbsp. l.

Step-by-step preparation:

  1. Combine warm kefir with salt, sugar and yolks.
  2. Beat the mixture with a whisk, adding flour in small portions.
  3. Warm the milk until warm and pour it into the dough in a thin stream.
  4. Add the oil last and leave the dough alone for 30 minutes.

Composition elements:

  • kefir with 3.2% fat – 500 ml;
  • sugar – 2 tbsp. l.;
  • a pair of eggs;
  • premium flour - 2 cups;
  • a pinch of soda and salt;
  • boiling water - 2 cups.

Steps for making golden brown pastries with holes:

  1. Pour the kefir into a container, pour sugar, salt and soda into it.
  2. Next, add eggs and vegetable oil. Mix lightly and add flour in portions, also continuing the kneading process. The consistency of the dough will be thick, like pancakes.
  3. Pour boiling water in a thin stream until the dough becomes liquid (pancake).
  4. Leave the dough for 15-20 minutes so that it “rests” and the kefir extinguishes the soda.
  5. Pour the pancake onto the hot surface of the frying pan, greased with oil, and turn it from side to side so that the dough covers the entire surface of the frying pan.
  6. Fry for a minute on both sides until beautifully golden.

Lacy, thin pancakes fry quickly and are easily removed from the frying pan. Baked goods can be served as an independent delicacy, offering jams, creams and honey in a rosette. And if you fill the pancakes with soft cheese, mushrooms or salmon slices, they turn into a real restaurant dish.

I already have a couple of basic pancake recipes in my culinary repertoire, but today I’ll add another wonderful recipe to this list. Kefir pancakes with boiling water intrigued me literally as soon as I learned about them. The very fact of this combination - kefir and boiling water - surprised me and made me take a closer look at the recipe. And since my family loves pancakes, I decided to make them as a dessert.

In the process of preparing pancakes with kefir and boiling water, I was very surprised by the amount of foam that formed during the process of beating eggs with boiling water. Since the dough contains kefir, and even soda, it is quite natural that pancakes made with kefir and boiling water turn out lacy, that is, pierced with miniature holes. This looks very tasty.

  • 2 cups kefir
  • 2 cups boiling water
  • 3 tbsp. Sahara
  • 0.5 tsp salt

Take a container convenient for preparing batter. I usually use a large salad bowl or bowl for this. The pan is also perfect for mixing pancake batter. Beat four eggs into a bowl.


Using a mixer or by hand, beat the eggs until a homogeneous texture and light foam on the surface of the mass are obtained.


Put the kettle on the fire. We will need two glasses of boiling water. As soon as the kettle has boiled, pour boiling water into the egg mass in a thin stream, while continuing the beating process. Surprisingly, the eggs do not curl.


When you begin to add boiling water to the eggs, you will notice that while beating, the egg mass will begin to foam abundantly. And if the pan for pancake dough is not spacious enough, then the foam may even “run away”.


Add two glasses of kefir of any fat content to the dough that is not yet ready. Lightly mix the mixture with a whisk.


Four tablespoons of odorless sunflower oil will make future pancakes made with kefir with boiling water very tender and elastic.


We also add three tablespoons of sugar and half a teaspoon of salt to the pancake dough. Mix.


Add two cups of flour to the pancake dough, each with a small heap. You will also need baking soda, about a teaspoon.


Gently stir the flour into the dough and check it for the presence of flour lumps (there should be none).


Take a frying pan and wash it thoroughly with baking soda and salt. We need to completely degrease its surface. Then heat it for at least 2 minutes and grease the surface of the pan with a small amount of sunflower oil. It is best to grease with a pastry brush. Poland will not need sunflower oil.

Using a ladle, scoop up a portion of kefir-based pancake batter with boiling water and pour it into the center of the pan. Then, using circular movements of the pan, slightly tilting it to the sides, let the dough spread over the entire bottom. Fry the pancake for 1-1.5 minutes on one side, after which, using a knife with a rounded edge or a special pancake spatula, carefully turn the pancake over to the other side and fry it for another 0.5 minutes. The fire is less than average, but not the smallest.

It just so happens that most often pancakes are prepared using milk or plain water. Housewives less often knead pancake dough with kefir, because it is believed that this dairy product is more suitable for baking flatbreads, pancakes or gingerbread. How to cook thin pancakes with kefir and boiling water

Place all the necessary ingredients in the specified quantities on the work surface of the kitchen table. We recommend that you remove chicken eggs and kefir from the refrigerator in advance so that these products warm up to room temperature. To knead the dough, prepare a suitable cup (bowl, plate) in which it will be convenient for you to mix the ingredients. Also take a whisk or use a more “modern” kitchen device - a mixer. So, break all the chicken eggs into a cup.

Immediately season the chicken eggs with salted spice and the stated amount of granulated sugar.

At this culinary stage you will need a whisk (or mixer). Beat the chicken eggs until a foamy head forms.

Add soda to kefir at room temperature. And then pour it into the resulting sweet egg mixture. Mix the ingredients again.

Stir flour into kefir mixture. The dough will be thick. This is what is needed at this stage.

Pour a glass of boiling water into the thick dough and stir immediately. Don't forget to add vegetable oil to the resulting pancake dough. Mix the dough ingredients again.

Grease the surface of the pancake pan with vegetable oil. As soon as the frying pan is hot, use a ladle to scoop out the required amount of kefir pancake batter with boiling water and spread it over the surface.
